Domaine Olivier Morin is a winery in the highly esteemed Chablis region of Burgundy, France. Olivier Morin can trace his ancestry in the village of Chitry le Fort back for countless generations. His home was built by his great-great-grandparents, and his grandfather was one of the first vignerons in Chitry to bottle his own wines. Morin's family has been living on the same parcel of land since at least 1650. Olivier himself has been in charge of the estate since 1992, when he left a career in the music industry in order to take over the family domaine. One quarter of the domaine is planted with Aligoté, one quarter with Pinot Noir, and the other half with Chardonnay grapes.
Domaine Olivier Morin has been dedicated to crafting wines of the highest quality. The estate pays meticulous attention to every step of the winemaking process, from vineyard management to cellar practices, with the goal of expressing the purest essence of Chablis in each bottle. In the cellar, Olivier Morin practices a minimalist winemaking approach, allowing the natural expression of the fruit and terroir to shine through in the wines. Fermentation is often carried out spontaneously with indigenous yeasts, and Morin avoids excessive manipulation or the use of additives. The wines are aged in neutral vessels such as stainless steel tanks or old oak barrels to preserve their freshness and purity. Critics and wine enthusiasts are impressed by the precision, purity, and finesse of Morin's expressions of Chablis terroir, and the wines continue to attract attention both domestically and internationally. Today, Domaine Olivier Morin is recognized as one of the rising stars of Chablis.
Chardonnay is the sole grape variety used by Domaine Olivier Morin for its white Chablis wines. Chardonnay in Chablis is prized for its ability to express the unique terroir of the region, which is characterized by Kimmeridgian limestone soils and a cool continental climate. Chardonnay from Chablis typically exhibits crisp acidity, citrus and green apple flavors, and a distinct minerality. While Domaine Olivier Morin focuses primarily on the cultivation of Chardonnay, the flagship grape variety of the Chablis appellation, it also produces the white wine Bourgogne Aligoté made from the Aligoté grape variety. Aligoté is a traditional grape of Burgundy, often considered the region's second white grape after Chardonnay. Bourgogne Aligoté from Domaine Olivier Morin is crafted exclusively from the Aligoté grape variety, which is known for its high acidity, citrusy flavors, and refreshing character. Aligoté wines are typically lighter in body compared to Chardonnay and are appreciated for their crispness and versatility. Like the Chablis wines, Domaine Olivier Morin's white wines from Chitry are crafted predominantly from the Chardonnay grape variety. Chardonnay thrives in the cool climate and limestone soils of Chitry, producing wines with bright acidity, citrus and orchard fruit flavors, and a pronounced minerality.
