Noellat is a popular name across the Cote de Nuits. In the heart of Burgundy, Domaine Michel Noëllat & Fils has embodied both tradition and innovation for generations. Founded by Félix Noëllat in the 19th century, the 20 hectare vineyards of the estate have been entrusted to 5 successive generations, each leaving their mark on the heritage of this prestigious estate.

Noëllat finds a commitment to progress without renouncing the ancestral traditions that define Burgundian winemaking. This alliance between innovation and respect is perceptible in every aspect of the estate's operations. In 1980, Michel Noëllat commissioned the construction of an authentic stone vaulted cellar beneath the property, a tangible symbol of his dedication to preserving and enriching the region's wine heritage. After Michel’s death in 1989, his sons Alain and Jean-Marc Noellat took over the reigns of the estate, Sophie, daughter of Alain Noellat and her cousin Sebastuien, are now in charge of the winemaking.

The hand-harvested grapes undergo rigorous sorting before being delicately transported to the cellar in small containers to preserve their integrity. The wines of his vintage  For red wines, a meticulous maceration process takes place over three days at low temperatures, followed by fermentation in closed tanks.Throughout vinification, regular pumping over and perforations of the cap ensure optimal extraction of flavors and tannins. The wines then mature gracefully in French oak barrels, with judicious use of new wood to complement the fruit expression. After 15 to 18 months of aging, the wines are bottled, each vintage being a testimony to the terroir and the art of the Noëllat family.

Nuits-Saint-Georges is a friendly town with a winegrowing history going back many centuries. It gives its name to the Côte de Nuits and its patron saint, Saint-Georges, gives his name to its most famous wine.

The Nuits-Saint-Georges appellation is located in Burgundy in the Côte de Nuits, between Beaune to the south and Dijon to the north, it is crossed by the legendary Route des Grands Crus. It extends over approximately 7 kilometers, covering the communes of Nuits-Saint-Georges and Premeaux-Prissey, and is divided into two distinct parts. To the north, the appellation stretches right up to the Vosne-Romanée border, producing wines that are often more full-bodied and structured. To the south, vineyards in Nuits-Saint-Georges and Premeaux-Prissey produce wines that tend to be more supple and accessible. The appellation includes 41 Premiers Crus climats.

The terroir of Nuits-Saint-Georges is varied, with soils composed of limestone, marl and clay. The majority of wines produced in this appellation are reds, made mainly from the Pinot Noir grape. White wines made from the Chardonnay grape are also produced, but in small quantities. Around five percent of the appellation's production is devoted to white wines, similar to those found in Fixin and Nuits-Saint-Georges. The majority of these wines are made from Chardonnay, with a few parcels devoted to Pinot Blanc or Aligoté.

Wines from this appellation are often described as powerful, refined, with a rich, concentrated texture and structured character. These wines display a deep ruby color and offer intense aromas of black fruits such as blackberry or blackcurrant.

Among the estates in the Nuits-Saint-Georges appellation are : Domaine Henri de Villamont, Domaine Michel Noëllat, Domaine Henri & Gilles Remoriquet, Domaine de Bellene, Maison Louis Jadot, Domaine Louis Latour, Domaine Lucien Le Moine and Domaine Hubert Lignier.
